As well as problems related to diet that can result in cramping, the efficiency of the muscles themselves can be a possible cause...  In most sports, not solely MTBing, most athletes/participants etc do not place a great enough emphasis on the flexibilty of the major muscle groups. I find that regular stretching (for the sake of increasing flexibility, not just warming up etc) reduces the frequency of cramp for me, aswel as reducing the ache in muscles after a ride, and even the risk of injuries...  Regular stretching gradually increasing the muscles flexibility, and therefore efficiency, so.. better flexibility=better performance- faster, longer etc.  It really does make a difference, but flexibility training cn be pretty hard  Still, it's worth it  By the way, if the cramp is around/above the knee, it's probably down to your quadriceps (thigh) muscles... so, you could search stretches for them on google or what ever....or i could just describe a few?
