While the whole bumping the ISO thing is good to some extent, Digital noise isn't always the same as film noise. It varies wildly, and can look anything from very good to horrendously bad.. I've always found B&W film grain to be far more consistent.
Plus, you can always make a colour photo B&W, never the other way round

For this, even when shooting a portrait i know has to be black and white, i shoot colour. I think my conversion methods in PS are much better than in my camera..
